I often do because I really like this cake, it should be a sponge cake, I always use a recipe for Anna Moroni, do not ever cheat on me and I will always be a perfect sponge cake,
ingredients for the PDS:
4 eggs, sugar

flour, vanilla, yeast (optional)

(at least 10-15 minutes)
mix gently with a wooden spoon the flour (and vanilla) sieving, (if you add Sift together the baking powder to flour)

in preheated oven until it is cooked (usually 40 minutes, cmq do the toothpick test)
meanwhile PDS to cool the cream, I always do this because it is very good plus there are no eggs, stir mascarpone
(500gr.) with a tube and a half of milk condensed
I cut the pds in 2 and wet the surface with plenty of coffee, put half cream and sprinkled with cocoa powder (I use the fair trade to me is the best) I leaned over the other half of RP and with the remaining wet coffee, spread the remaining cream
sprinkle with plenty of cocoa and refrigerate to firm up a bit
here's the interior is very good .......
